Ingredients

  1. 9 Persian Cucumbers
  2. 2 Large Red Peppers
  3. 1 Red Onion
  4. 2 Ripe-off-the-vine tomatoes
  5. 1 Sprig of Parsley
  6. 1 Can of Drained Garbanzo Beans
  7. 1 TBS of Kalama Olive Juice

Optional

  1. Tin of Anchovy fillets

Decadence

  1. 4oz Crumbled Feta Cheese

Preparation

  1. Slice all the veggies
  2. Mix with chopped parsley
  3. Add beans and juice
  4. Toss thoroughly
  5. Chill for at least 2 hours

Service

  • Serves 8 meals -- or 16 snacks.
